I am so excited for week one of the challenge! The theme of the week is Main Dish. Does everyone know what they'll be making? Feel free to post in the comments what your plan is. Also, email me a picture for posting when you accomplish it!

I made stuffed artichokes - not exactly a main dish but I ate it as a meal so it counts. The stuffing was good - my only complaint was the artichokes spun during cooking despite being very tightly packed into the pot they were in. I would make them again, but would probably bake them in a shallow dish with a little water in a low oven. Not an everyday recipe but still a keeper!
Mine turned out great! The butternut squash was delicious (it was a first time eating it for us) and it was a super easy low ingredient dish, I'd make it again for sure!
So I'm not doing great about sticking to the schedule, but yesterday I made this Creamy Garlic Pasta and it was fantastic!! Super easy to make (took less than 20 mins) and delish. Maybe the schedule is too limiting? Maybe we keep the theme as a suggestion for weeks we don't have an idea, but not limit people to that theme. Thoughts?
I like that better. Depending on the week taking on a specific project might not be doable, but something else might be so the flexibility would be nice.
